How to play Minecraft on a Mac without a mouse
Minecraft Java is built for a mouse: hold the left button to mine, press the right one to place, and move the mouse to look, often all at once. A MacBook trackpad can do each of those, just not comfortably together. There are three fixes, from settings you already have to a game controller, and you can mix them.
Placing blocks: the trackpad's right click
Placing a block, opening a chest and eating all use the right mouse button. On a trackpad that is a secondary click: in System Settings, Trackpad, set Secondary click to Click or Tap with Two Fingers, then click with two fingers to place. Control-click also counts as a right click in Minecraft on a Mac, but Control is the sprint key, so you may start sprinting as you place.

Mining without holding a click
The hard part on a trackpad is holding the click to mine while your finger also has to turn the view. Minecraft can fix that itself. In Options, Controls, Key Binds, move Attack/Destroy and Use Item/Place Block to keys you can reach, so one hand mines and places on the keyboard while the other looks around on the trackpad. In the same Controls screen, set Sneak and Sprint to Toggle so neither needs a held key, and under Mouse Settings turn Mouse Sensitivity down if the trackpad spins you around.
The fix for all of it: a controller
A PS5, PS4, Xbox or Switch Pro controller gives Minecraft a stick to look with and triggers to mine and place, with no mouse anywhere. Java Edition ignores controllers, so InputConfig, free on the Mac App Store, turns the pad into the keyboard and mouse the game expects. Its Minecraft preset walks on the left stick, looks on the right, mines on the right trigger and places on the left. If one hand does most of the work
A controller layout can be built around the hand you have: every action within reach of one thumb, a hold or a double tap on one button for a second job, and toggles instead of held buttons. Using a Mac with one hand goes through it.

Can you play Minecraft on a MacBook without a mouse?
Yes. Two-finger click places blocks and the trackpad looks around. Moving Attack to a key in Minecraft's Controls removes the hardest part, holding a click while you move. A controller is the most comfortable way.
How do you place blocks in Minecraft on a Mac without a mouse?
With the trackpad's secondary click: turn on Click or Tap with Two Fingers in System Settings, Trackpad. You can also bind Use Item/Place Block to a key in Minecraft's Controls, or to a trigger on a controller.
How do you sprint and crouch in Minecraft on a Mac?
Sprint is Left Control, or a double tap of W. Crouch (sneak) is Left Shift. Both can be set to Toggle in Options, Controls. In InputConfig's Minecraft preset, sprint is the left stick click and sneak is Circle or B.
